Almond Biscotti Recipe

Almond Biscotti Recipe

 

Ingredients

  • 1 cup sugar + 1 tsp
  • 3 tsp soft butter​​​cream
  • 2 eggs
  • 1 tsp olive oil
  • ½ tsp vanilla
  • 1 t almond extract
  • 2 cups flour
  • 1 tsp baking powder
  • ¼ tsp salt – ​​​​add to egg mix
  • ½ cup whole almonds
  • ½ cup sliced almonds

 


Instructions 

  • Mix dough, divide in half and, using plastic wrap, form into 2 logs
  • Chill 30 minutes
  • Unwrap the logs, then place them on cookie sheets lined with parchment paper
  • Bake at 350 for 30 minutes
  • Cool 15 minutes
  • Slice in 1/2 inch slices at an angle
  • Reduce heat to 325 and bake 12 minutes, slices laid “side up”
  • Flip to the other side and bake 15-20 more minutes until lightly browned
    (this will get them nice and crunchy all around!)
  • Cool
  • Eat!

Pair with a cup of coffee, tea, wine – any beverage of your choice!
(They also go marvelously with smoothies and gelato…)
