Almond Biscotti Recipe
Ingredients
- 1 cup sugar + 1 tsp
- 3 tsp soft buttercream
- 2 eggs
- 1 tsp olive oil
- ½ tsp vanilla
- 1 t almond extract
- 2 cups flour
- 1 tsp baking powder
- ¼ tsp salt – add to egg mix
- ½ cup whole almonds
- ½ cup sliced almonds
Instructions
- Mix dough, divide in half and, using plastic wrap, form into 2 logs
- Chill 30 minutes
- Unwrap the logs, then place them on cookie sheets lined with parchment paper
- Bake at 350 for 30 minutes
- Cool 15 minutes
- Slice in 1/2 inch slices at an angle
- Reduce heat to 325 and bake 12 minutes, slices laid “side up”
- Flip to the other side and bake 15-20 more minutes until lightly browned
(this will get them nice and crunchy all around!)
- Cool
- Eat!
Pair with a cup of coffee, tea, wine – any beverage of your choice!
(They also go marvelously with smoothies and gelato…)
